noBAKE.

i absolutely believe in healthy eating and healthy habits, but i also believe in balance...and let's just face it...i still have a sweetTOOTH from time to time! :)  so i decided to "get my domestic on" and whip up some sweetTREATS.  one of my favorite indulgent combinations is chocolate & peanut butter, so i decided on an old go to recipe: noBAKE cookies.  quick, easy, not toooooo "bad" & damn good!  now off to the kitchen to gather all of the ingredients...



speaking of ingredients:  i love that there are only 7 ingredients in this recipe, all of which i typically have in the kitchen...perfect for when the sweetTOOTH strikes! (or completely dangerous).  i also love that my mom used to make these for me when i was a kid, so they provide me with that oh so good comfort food feeling.  i have, however, adapted the recipe to make it slightly less sinful. ;)


first measure out the almond milk, coconut sugar, coconut oil & the cocoa powder.


combine those four ingredients in a pot & bring them to a boil for about one minute, stirring frequently.  then remove from heat.


measure out the peanut butter, rolled oats & vanilla...& then add them to the melted chocolate yummy goodness;)


mix it all up.


drop spoon full's of the mixture on a cookie sheet, covered in wax paper & place in the refrigerator.  i let them cool for about ten minutes.  i then take them out and "smoosh" them down a bit....so they are a little more flat. (personal preference) then back into the fridge until they are completely cooled. (if you can wait that long) :0


layer them on with wax paper...on a plate, in a storage container, or however you wish!

ingredient.
1/2 cup almond milk
1 cup coconut sugar
1/4 cup coconut oil
3 tbsp.  cocoa
1/2 cup peanut butter
31/2 rolled oats 
1 tbsp. vanilla
